So. Well. This is what happened yesterday and today. We decided to make a salsa recipe from the Ball Home Canning Recipe book. It had six cups of tomatoes and six cups of chopped Jalapenos if you can imagine it. We remembered to wear gloves after my escapade last year which nearly sent me to the emergency room. When cookbooks warn the cook to wear gloves, she should listen. It took twelve hours and layer after layer of baking soda paste to stop my hands from burning!
When the half-tomato and half-jalapeno salsa was cooking, the aroma wafting through the house was like breathing mace. Yes. Mace or pepper spray, making our eyes water. We finished cooking the devilish mixture, bottling it, and putting leftovers in a bowl so Michael could feast on tortilla chips and salsa too hot for human consumption.
We finally had to make the kid stop eating it because we feared he'd be sick digesting the salsa even if his taste buds weren't on fire. Kim teased him about becoming an 'anal flame thrower' in the morning. We are taking precautions. We're making him use a public restroom tomorrow.
We've bottled 40 pints of salsa so far and we haven't gotten through even half of the tomatoes. YIKES.
Love,
Carolyn
You know that it is a picture perfect. To see it there like that it made it all worth the work and so on to get it there. BEAUTIFUL
ReplyDeleteIt is a gorgeous picture, isn't it? Can you believe how many hands were involved in the process from planting to picking to taking the photograph?
DeleteThis picture could grace the cover of any food magazine out there!
I was just thinking, Who had to do the most work? The one that raised it or the one's that had to cook it?
ReplyDeleteUmmmm...I'm not sure, Dad. Now that you have landscape cloth instead of weeding; and you have automatic sprinklers instead of a watering can; and you have industrial strength fertilizers and pesticides--well, it might not be as time-consuming growing vegetables as it used to be.
DeleteBut then---let's be honest. I'm not chopping everything by hand anymore either. There's gas range tops (instead of wood stoves), and garbage disposals and Cuisinarts, and nephews. ha!
We canned twenty quarts of tomatoes today and six pints of pizza sauce. Tomorrow we'll be canning chili sauce!
ReplyDeleteYea, things do change. Most things are easier for all to do. And we can get a lot more done with less work. Some things are better than some of the things that we did in the good old days.
I really like the picture on the top. I would like to make a copy of it. Joy doesn't like it because of me. I didn't have my sunday cloths on.......................O WELL its just me in my overalls.
So you have your produce about canned and now your ready for some more. OK
